Autumn breakfast quinoa

This recipe is so easy that I don’t even have any pictures of the steps, just a couple of the final product. It’s perfect for a cool fall morning and utilizes signature flavors of the season to jazz up the usually bland (but protein-packed) quinoa. Welcome autumn by saying goodbye to your boring ‘ol oatmeal and hello to this morning treat!


3/4 cup quinoa, rinsed
3/4 cup unsweetened vanilla almond milk
1/4 cup water
1/2 apple, cubed
1/2 pear, cubed
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

In a medium saucepan, combine quinoa, almond milk, and water. Stir occasionally and bring to a boil. Add cubed apples and pears, cinnamon and nutmeg and bring to a simmer. Cover and cook for about 12-15 minutes or until all the liquid is absorbed. Top with the other halves of the apple and pear and a dash of cinnamon if desired. I also added a tablespoon of chia seeds to mine just for fun!
