Apple Butter

It’s that time of year! Every food blog/instagram/website I follow is dishing out (no pun intended) their spin on the delectable creation that is apple butter. So naturally, I had to follow suit. I’m trying to make it in this food blogging world, after all!

While all of my recipes are generally simple, this one takes simplicity to a new level. Keep the sugar for your coffee folks, ’cause this baby’s sweetness is au naturale. Spread it on a sandwich to sweeten things up for lunch or on a banana for a healthy late night snack. It’s like autumn exploded in your mouth. Who could complain about that?

No Sugar Added Apple Butter
I finally understand the saying “apple of my eye.” They’re the sweetest things I know!

Ingredients:
4 large honeycrisp apples, unpeeled and diced
1/4 cup Grade A maple syrup
1/4 cup water
2 tablespoons apple cider vinegar
1 teaspoon cinnamon
1 teaspoon vanilla extract

Directions:
Place apples in a saucepan over medium heat. Pour in maple syrup, water, apple cider vinegar, and cinnamon. Bring to a boil, stirring occasionally.

Reduce heat to low and let simmer for about an hour or until nearly all of the liquid is absorbed. Remove from heat and transfer apple mixture to a blender. Add in vanilla extract.

Blend until smooth. Be careful with how hot the apples are. If you’d rather let them cool before you blend, feel free.

Store in an airtight container in the fridge. Enjoy on your favorite snack all October long ;).
