Sweet potato and walnut dessert smoothie

Hope you’re all not sick of sweet potatoes yet, ‘cuz I’ve got one more delicious concoction for you to try! This sweet potato and walnut smoothie is simple but filling, with a nice zing of pumpkin pie spice and ginger that account for its classification as a “dessert” smoothie. Beat your cravings for holiday sweets with this decadent and nutritious vegan shake.

Sweet Potato and Walnut Dessert Smoothie
Surprisingly, I’m still not out of sweet potatoes, even after all of my cooking this week. This just goes to show how so much can be made from so little! By utilizing fruits and veggies to their fullest extent, we can decrease the amount of food waste we produce and the money we spend on groceries, all while consuming the nutrients we need and eliminating empty calories.

Ingredients:
1 cup sweet potato, boiled and slightly mashed
1 frozen banana
1 cup unsweetened plain coconut milk
1/4 cup chopped walnuts
1/2 inch chunk fresh ginger
1 teaspoon vanilla extract
1 teaspoon pumpkin pie spice

Directions:
Combine everything in a blender. Mix and pulse until consistency is smooth (although there will still be tiny remnants of the walnuts- can’t get much smoother than this). Serve in a tall glass and enjoy!

This makes about 1 large smoothie or 2 small ones and is appropriate for breakfast, dessert, or just as a snack! The pumpkin pie spice was a bit hard to find, so cinnamon may work just as well as substitute, although I haven’t tried this yet.
