In honor of St. Patrick’s Day, I have a festive treat for y’all. I developed this recipe as a spin off of McDonald’s legendary shamrock shake, but made sure it was free of added sugar, food dye, and artificial flavorings! Who says you can’t have your cake and eat it too?! Have a safe and fun day!
1 cup unsweetened coconut milk (should be cold)
1 fresh or frozen banana
1 cup spinach
1/8-1/4 teaspoon peppermint extract (depending on how minty you’d like it!)
1/4 teaspoon vanilla extract
Raw cacao powder or shaved dark chocolate, for garnish
Top o’ the mornin’ to ya!
