Strawberry quinoa salad with lime balsamic dressing (vegan, gluten-free)

Mother Nature has done it again, bringing us yet another picture perfect weekend! Here in Philly, the beautiful weather came with fabulous company, as my friends and I competed in the ROC (Ridiculous Obstacle Challenge) Race at Citizens Bank Park. After bouncing around on inflatable obstacles, attempting to make it across a set of monkey bars (how the heck did we all do that as kids?), and crossing the finish line at the bottom of the “World’s Largest Water Slide,” we returned home to enjoy some Pica’s pizza and beer (and Oreos) on the deck. All this fun in the sun inspired today’s very seasonal recipe. Strawberries are in the height of their deliciousness right about now, and I’d be an irresponsible food blogger not to provide with some type of concoction đŸ™‚

Strawberry Quinoa Salad with Lime Balsamic Dressing

1 1/2 cups fresh strawberries, diced
1 heaping cup black beans, rinsed
1 avocado, diced
2 cups cooked quinoa
1 heaping tablespoon finely chopped red onion
2 tablespoons plus 1 teaspoon fresh lime juice
2 tablespoons balsamic vinegar
4 tablespoons extra-virgin olive oil
Sea salt, ground black pepper, and balsamic vinegar to taste

In a large bowl, combine the strawberries, black beans, avocado, and quinoa. For the dressing, whisk together the red onion, lime juice, balsamic, and olive oil. Stir 4-6 tablespoons of the dressing into the strawberry/quinoa mixture until everything is coated. Add salt, pepper, and balsamic to your liking. Serve and enjoy!
