Greek cauliflower rice with mushrooms (vegan, gluten-free)

Happy Monday and welcome to February everyone! I’m excited to get another month started on It’s a Veg World. And plus, February means we’re closer to Spring than we were before ;)…although, according to Punxsutawney Phil, we’re in store for 6 more weeks of winter. I’m beginning to think that whole “seeing his shadow” thing is rigged…

With that in mind, there’s no better time to introduce a new recipe that’s incredibly simple and perfect for a cold evening. Today’s dish sneaks in two different veggies (yep, you read the title correctly- rice made out of cauliflower!!!) and traditional Greek seasonings for a nutritious and flavorful meal.

Greek Cauliflower Rice with Mushrooms (Vegan, Gluten-free)

Cauliflower 1

Ingredients:
1/2 head cauliflower, chopped
1/2 onion, diced
1-2 tablespoons extra-virgin olive oil
1 teaspoon dijon mustard
1-2 teaspoons apple cider vinegar
2 teaspoons oregano
2 teaspoons capers
5 large mushrooms, chopped
1/2 tablespoon butter or Earth Balance
1-2 teaspoons lemon juice
Sea salt and black pepper to taste

Directions:
Using a food processor or blender, chop cauliflower florets into fine pieces until they resemble rice. Heat olive oil in a small skillet before adding cauliflower rice and chopped onion. Cook for 5-7 minutes, adding the dijon, apple cider vinegar, oregano and capers as you stir. Cover and set aside. Next, heat butter or Earth Balance (and a little olive oil if you’d like) in another small skillet. Add mushrooms and cook over low-medium heat for 5-7 minutes or until brown and tender. Add in lemon juice, cauliflower, and salt and pepper to taste. Stir, remove from heat, and enjoy!
