May in Philadelphia has been sunny and rainless, giving us a great first taste of summer! And with the Broad Street Run behind me and plenty of summer exercise still to come, I’ve been itching for a healthy and refreshing treat to fuel my Schuylkill Trail runs. Throw in a 90 degree day and an accidental re-discovery of my popsicle holders, and voila, a perfect warm weather treat was born…

Strawberry-Banana-Peanut Butter Popsicles (vegan)
With no added sugar, 2 servings of fruit, and a scoop of protein, these simple popsicles are ideal for a low-calorie and nutritious snack. Perfect for both adults and kids!

SBPB popsicles
Ingredients:

1 cup almond milk (or milk of your choice)
2 cups frozen strawberries
1 banana
1/2 cup water
2 tablespoons peanut butter

Directions:
Blend ingredients until smooth. Pour into 6 popsicle holders and freeze until solid!
