Today’s refreshing recipe comes just in time for the humid first week of summer we’ve had here in Philly. Made with some of my favorite summer foods, these roll-ups are light but filling, sweet but not too sweet, and just plain fun. And for a little extra sweetness, be sure to whip up the vanilla cinnamon dressing made with just five ingredients!
1/2 cup unsweetened almond milk
1/2 cup canola oil
1 tablespoon maple syrup
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon
Slice the cucumber into thin strips using a mandolin or vegetable grater. In a small bowl, mash the sliced cherries and blueberries into the avocado cubes. Next, roll up a tablespoon of the ingredient mixture into a cucumber slice and put together with a toothpick. Make as many as desired.
For the dressing, combine the almond milk, canola oil, maple syrup, vanilla, and cinnamon in a blender and pulse until smooth. Serve cold with the cucumber roll-ups for a delicious summer snack!
