As another semester comes to an end, I finally have the chance to experiment in the kitchen. And in typical Veg World fashion, I was aiming to create a recipe that was fast, inexpensive, and just plain delicious. Too difficult a feat?! Well, I’ll let you decide for yourself.
Garlic Beet Chips (vegan, gluten-free)
Got 30 minutes? That’s all you’ll need!
3 large beets, scrubbed
2 to 3 tablespoons extra virgin olive oil
Preheat oven to 325 degrees Fahrenheit. Using a mandoline (or knife- but be careful!), thinly slice the beets into even, circular pieces. Place them on 2 baking sheets without overlapping. Lightly coat chips with olive oil and sprinkle with garlic powder, salt, and pepper to taste. Bake for 30 to 35 minutes or until crispy (but not burnt- happened to me the first time)!
