Garlic beet chips

What better way to celebrate the Christmas season than with a yummy root vegetable? Spoken like a true food nerd, I know…but, believe me, this recipe is a MUST try! Throw these tasty chips into the mix with your Christmas roasts and eggnog, and you won’t be disappointed. Or better yet- leave them out for Santa on Christmas Eve. As another semester comes to an end, I finally have the chance to experiment in the kitchen. And in typical Veg World fashion, I was aiming to create a recipe that was fast, inexpensive, and just plain delicious. Too difficult a feat?! Well, I’ll let you decide for yourself.

Garlic Beet Chips (vegan, gluten-free)
Got 30 minutes? That’s all you’ll need!
Beet chips 1

3 large beets, scrubbed
2 to 3 tablespoons extra virgin olive oil
Garlic powder
Sea salt
Black pepper

Preheat oven to 325 degrees Fahrenheit. Using a mandoline (or knife- but be careful!), thinly slice the beets into even, circular pieces. Place them on 2 baking sheets without overlapping. Lightly coat chips with olive oil and sprinkle with garlic powder, salt, and pepper to taste. Bake for 30 to 35 minutes or until crispy (but not burnt- happened to me the first time)!
