Every summer, I find myself in a love affair with avocados. Of course, I enjoy them at all times of the year, but something about the warm weather just keeps me coming back for more…and more…and yep, still more!
Usually I keep avocados in stock to make guacamole, or to add to fresh tomato sandwiches, but occasionally I’ll get a little more creative. Exhibit A: my Avocado and Mango Green Smoothie. Exhibit B: Today’s post.
I first experimented with this recipe when I was visiting my family in Philadelphia a couple of weeks ago. I could not get over its versatility! Whether it was on my egg, lettuce, and tomato sandwich for lunch…
…or next to scrambled eggs for breakfast, this avocado spread was the perfect condiment for every meal.
So, as the summer comes to an end, it’s time to celebrate my favorite “seasonal” food with a new avocado recipe for you to try!
Garlic Avocado Spread
- 1 1/2 ripe avocados
- 4 tbsp extra-virgin olive oil
- 2 tsp dijon mustard
- 1 tbsp lemon juice
- 1 garlic clove
- 1/2 tsp black pepper
- 1/2 tsp sea salt
- Combine all ingredients in a food processor or blender.
- Pulse or blend on low to medium speed until smooth.
- Adjust seasonings as needed.
- Chill, and enjoy!
