I’m a veggie enthusiast.
Why? Vegetables are nutritious, versatile, and most of all–delicious! They are the primary components of a healthy diet, and filled with an abundance of nutrients. Veggies and fruits are the most diverse food group, and can be prepared in so many different ways. And eating a lot of them may play a large role in the prevention of certain diseases.
Vegetables really are the mainstay of a healthy plate. But they aren’t the only foods we need. A balanced plate, with a variety of foods [and yes that can include animal products, and chocolate too ;-)], can help us achieve optimal health. I don’t believe that everyone needs to go vegan or vegetarian (unless they want to!), but I do believe that a healthy diet is “rooted” in vegetables.
My enthusiasm for veggies is why I started It’s a Veg World After All. I wanted to show others how many different ways you can eat vegetables, and to help them fall in love with veggies too.
It all started as a blog in the summer of 2013. I was a recent college graduate, looking for ways to share recipes. Soon enough, I was creating easy and delicious dishes on the reg. Only one year later, I was enrolled in graduate school on the path to becoming a Registered Dietitian Nutritionist (RDN).
My passion for cooking with vegetables continued to grow throughout school and even more during my dietetic internship. As soon as I passed the national exam for dietitians, I knew my calling in the field of nutrition: help others fall in love with veggies and showcase simple, healthy, and delicious recipes. I want to translate nutrition into every day, to meet people where they are, and to assist in making gradual, sustainable changes to their eating habits that fit into their daily routines.
This realization led me to expand my blog to a nutrition business that offers private counseling, group education and recipe inspiration to help even the busiest individuals develop a lasting habit of preparing food and making healthful choices (that include veggies!). Aside from individual counseling and group education, I also partner with food brands that align with my philosophy to create paid content to introduce my readers and clients to new products, and to showcase how these products fit into a healthy lifestyle.
