  • Slice the cucumber into thin strips using a mandolin or vegetable grater. In a small bowl, mash the sliced cherries and blueberries into the avocado cubes. 
  • Next, roll up a tablespoon of the ingredient mixture into a cucumber slice and put together with a toothpick. Make as many as desired.
  • For the dressing, combine the almond milk, canola oil, maple syrup, vanilla, and cinnamon in a blender and pulse until smooth. Serve cold with the cucumber roll-ups for a delicious summer snack!
