Pumpkin Black Bean Dip

This vegan and gluten-free dip is slightly smoky with a hint of tang. Serve in a small pumpkin for Halloween parties! Recipe yields ~2 cups, or 8 servings

Ingredients

  • 1 15.5 oz can black beans rinsed and drained
  • ½ cup pureed pumpkin
  • 2 cloves garlic minced
  • ½ lime juiced
  • ¾ teaspoon cumin
  • ¼ teaspoon paprika
  • ¼ teaspoon salt

Instructions

  • Combine all ingredients in a blender, or in the Vitamix Explorian E310
  • Blend for ~1 minute, slowly advancing the speed to promote smoothness. If you are using a Vitamix, be sure to utilize the mini-tamper. 
  • Serve in a small pumpkin or bowl, with fresh veggies or tortilla chips.
