Sheet Pan Dill Radishes and Salmon

An easy sheet pan meal for a weeknight dinner. Fresh dill pairs perfectly with radishes and salmon!

Ingredients

  • 2 bunches radishes about 10-15 small
  • 1 tablespoon olive oil
  • 2 3-5 oz wild caught salmon fillets fresh or frozen and thawed
  • 2 tablespoon fresh dill chopped
  • Sea salt
  • Black pepper
  • Lemon zest to taste
  • Icelandic style yogurt (skyr) optional, for serving

Instructions

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. 
  • Wash and rinse the radishes then pat dry. Trim the ends. Slice each radish in half, or leave whole, depending on the size. In a small bowl, toss the radishes with olive oil, dill, salt and pepper.
  • Transfer the radishes to the baking sheet. Make room for the salmon fillets in the middle of the baking sheet. Brush the fillets lightly with olive oil, and season with dill, salt and pepper to your liking. Bake for 20 minutes until the salmon flakes with a fork and the radishes are tender.
  • Enjoy! Serve with yogurt and lemon zest.

Notes

Consider adding a whole grain or starchy vegetable (like peas) for a more complete meal.
