Pumpkin Spice Carrot Cake Bites
Enjoy these sweet and subtly earthy bites for breakfast, dessert, or as an afternoon snack! Packed with healthy fats and whole grains, these bites are a great choice for sustained energy.
Servings 12 bites
- 4 carrots trimmed and scrubbed (peeled if desired) and sliced into 1/2-inch pieces
- 1/2 cup walnuts
- 1/2 cup pecans
- 1/2 cup old-fashioned oats gluten-free if needed
- 1/4 cup maple syrup
- 2 tbsp coconut oil melted
- 1 tbsp pumpkin spice or substitute cinnamon
- 1 tsp ground ginger optional
- Shredded coconut for dusting
Place carrot pieces in food processor and pulse until finely chopped. Set aside in a medium mixing bowl.
Next, pulse walnuts and pecans in food processor until finely chopped. Add to mixing bowl.
Add rolled oats, maple syrup, melted coconut oil, pumpkin spice (or cinnamon), and ground ginger (optional). Stir until combined into a sticky mixture. Note: if mixture is too dry, consider adding a bit more melted coconut oil.
Roll mixture into bites (about 2 tbsp per bite). In a separate bowl, roll formed bites in shredded coconut until covered.
Place bites in a covered container and refrigerate for 30 minutes to an hour until firm. Bites will keep in fridge for up to 1 week.
