Spiced Plum and Walnut Baked Oatmeal

This is a vegetarian and gluten-free breakfast option perfect for holiday meals.

Ingredients

  • 2 cups old-fashioned rolled oats use gluten-free oats if needed
  • ½ cup walnuts chopped
  • 2 teaspoon pumpkin pie spice
  • 1 teaspoon baking powder
  • ¾ teaspoon sea salt
  • 2 cups milk of choice cow or almond both work
  • cup maple syrup
  • 1 egg
  • 2 teaspoon vanilla extract
  • 2 tablespoon butter melted and cooled slightly
  • 4 to 5 plums sliced into ¼" slices

Instructions

  • Preheat oven to 375 degrees F. Grease an 8" square baking pan with butter, or spray with oil.
  • In a large bowl, combine oats, walnuts, pumpkin pie spice, baking powder, and sea salt.
  • In a separate bowl, combine milk, maple syrup, egg, vanilla, and melted butter.
  • Line the bottom of the baking dish with sliced plums. Spoon the dry oat mixture on top of plums. Pour milk mixture on top, and make sure it seeps through. Top with another layer of sliced plums, and extra chopped walnuts and oats as desired.
  • Baked for 35 to 40 minutes or until plums are caramelized and tender on top. Enjoy!
