Ingredients

  • 1 pear chopped
  • 1 parsnip grated
  • 2 tablespoon all purpose flour can sub gluten free if needed
  • 1 teaspoon brown sugar
  • ¼ teaspoon cinnamon
  • 1 tablespoon walnuts chopped, plus more for garnish
  • 2 tablespoon rolled oats
  • 1 tablespoon coconut oil melted

Instructions

  • In a microwave-safe mug, combine the chopped pear, grated parsnip, flour, brown sugar, and cinnamon. Mix until the pear and parsnip are coated with the flour, sugar, and cinnamon.
  • In a small bowl, combine the walnuts, rolled oats, and melted coconut oil. Pour this over the contents of the mug.
  • Microwave on high for 3 to 4 minutes or until the pears are tender. Be careful taking the mug out of the microwave; you might want to use a dish towel or oven mitt. Garnish with additional walnuts, pears, brown sugar, or cinnamon. Enjoy!
