Using a mandoline, carefully slice the peeled kohlrabi into thin pieces. Depending on the size of your kohlrabi, you may have enough for 2-4 people as a side dish. Layer kohlrabi on small plates. Top with microgreens and pistachios.
Whisk together olive oil, lemon juice, and salt and pepper. Drizzle dressing over kohlrabi salad. Enjoy cold or at room temperature!
