Zesty Sunflower Carrot Spirals

I mean...who can resist these colors?! With a sunflower based dressing that's out of this world, you will love these delicious carrot spirals!

Ingredients

For the salad:

  • 5 carrots (multicolored or orange) spiralized (or, see notes below)
  • ½ cup edamame shelled
  • cup sunflower seeds
  • ¼ cup fresh cilantro chopped

For the dressing:

Instructions

  • In a large mixing bowl, combine spiralized carrots, edamame, sunflower seeds, and cilantro. 
  • In a separate bowl, combine the ingredients for the dressing and whisk until smooth. 
  • Pour dressing over the salad and mix until all ingredients are coated.

Notes

*You can spiralize your own carrots, or get pre-spiralized carrot noodles (you can find these in the frozen section at Trader Joe's). OR, you can use a vegetable peeler to create thin carrot ribbons.
