Zesty Sunflower Carrot Spirals

I mean...who can resist these colors?! With a sunflower based dressing that's out of this world, you will love these delicious carrot spirals!

For the salad:

  • 5 carrots (multicolored or orange) spiralized (or, see notes below)
  • 1/2 cup edamame beans shelled
  • 1/3 cup sunflower seeds
  • 4 tbsp fresh cilantro chopped

For the dressing:

  • 3 tbsp extra-virgin olive oil
  • 1.5 tsp toasted sesame oil
  • 2 tbsp sunflower seed butter
  • 1.5 tsp sriracha
  • 1.5 tsp light brown sugar
  • 2 tsp soy sauce
  • 1 lime juiced
  • Pinch of sea salt


  1. In a large mixing bowl, combine spiralized carrots, edamame, sunflower seeds, and cilantro. 

  2. In a separate bowl, combine the ingredients for the dressing and whisk until smooth. 

  3. Pour dressing over the salad and mix until all ingredients are coated.

Recipe Notes

*You can spiralize your own carrots, or get pre-spiralized carrot noodles (you can find these in the frozen section at Trader Joe's). OR, you can use a vegetable peeler to create thin carrot ribbons.
