Pumpkin Black Bean Dip
This vegan and gluten-free dip is slightly smoky with a hint of tang. Serve in a small pumpkin for Halloween parties! Recipe yields ~2 cups, or 8 servings

- 1 15.5 oz can black beans rinsed and drained
- ½ cup pureed pumpkin
- 2 cloves garlic minced
- ½ lime juiced
- ¾ teaspoon cumin
- ¼ teaspoon paprika
- ¼ teaspoon salt
Combine all ingredients in a blender, or in the Vitamix Explorian E310.
Blend for ~1 minute, slowly advancing the speed to promote smoothness. If you are using a Vitamix, be sure to utilize the mini-tamper.
Serve in a small pumpkin or bowl, with fresh veggies or tortilla chips.
