Am I even a millennial if I don’t have a post on my blog about avocado toast? After all, this seemingly innocent meal is the alleged reason my generation can’t afford to buy houses! (Hehe)
Jokes aside, I really do love avocado toast! Avocado is so nutritious on its own, with all its heart-healthy fats and micronutrients, but it also makes a great base for other healthful toppings. In fact, bulking up avocado toast can transform it into a balanced meal with lots of staying power.

Bread
If you’re wondering about the best bread for avocado toast, I highly recommend sourdough or a hearty, whole grain bread. Some of my favorite options include sourdough from a bakery, Trader Joe’s Sprouted Wheat Sourdough Bread, or Dave’s Killer Bread Organic 21 Whole Grains and Seeds. Whatever bread you choose, make sure it’s one that’s sturdy enough to hold toppings. Avocado will moisten the bread, so it’s important to use one that won’t fall apart as a result.
Choosing Avocados
It can be tricky to choose an avocado at the grocery store that won’t be rotten or mushy (or alternatively, still too hard!) by the time you use it. An avocado is ripe if it gives a little when you press your thumb into the skin. It should feel soft but not mushy. If you are purchasing Haas avocados, it’s easier to tell if they are ripe than other varieties because their skin darkens as they ripen. Store unripe avocados on the counter until ripe, then transfer to the fridge.
Topping Ideas
Here are my 6 favorite avocado toast toppings. For classic avocado toast, I like to mix the avocado with lemon juice. I often use this mixture as a base for the other varieties, but you can choose to omit the lemon juice if you want.
- Classic: Avocado and lemon juice mashed together and spread on toast, topped with salt (flaky sea salt is great), pepper, and red pepper flakes (optional)
- Vegan white bean: Avocado and cannellini beans mashed together and spread on toast, topped with arugula tossed with lemon juice and a sprinkle of hemp hearts
- Mexican-inspired: Avocado and lemon or lime juice mashed together and spread on toast, topped with corn (fire roasted is great, like the frozen kind from Trader Joe’s), pickled red onions, and feta or cotija cheese
- Egg: Avocado and lemon juice mashed together and spread on toast, topped with fried, boiled, poached, or scrambled eggs and hot sauce, cheese, or even chopped bacon
- Italian Caprese: Avocado mashed and spread on toast, topped with halved cherry tomatoes, torn fresh mozzarella, basil leaves (optional), and balsamic reduction/glaze
- Radish and peas: Avocado and lemon juice mashed together and spread on toast, topped with sliced radishes, steamed peas, and fresh mint (consider adding feta or goat cheese, nuts or seeds, and using my Sherry Pickled Radishes in place of raw ones if desired)
Instructions

Slice open the avocado and remove the pit. (For safe slicing, I love my avocado slicer.) Scoop out the flesh into a bowl. Mash with a fork (I love my large silicone fork for this task) until the avocado is your desired consistency. If you want to add lemon or lime juice, stir that in now.
Toast your bread as desired. I like to toast it a little more than I usually like, since the avocado will moisten the bread a little. I also like to mash my avocado in a separate bowl rather than on top of the toast, to prevent poking through the bread.
Spread the mashed avocado on your toast. I personally like to spread about ½ of an avocado per 1 slice of toast. This seems to be the right amount of avocado that won’t overload the bread.
Add toppings of choice. For classic avocado toast, I like to follow the formula of “salt, fat, acid, heat.” The avocado and lemon juice are the fat and acid, and I add flaky salt and red pepper flakes for the other 2 elements.

Classic avocado toast
- 1 slice sourdough bread - or bread of choice
- ½ avocado - pit and skin removed
- 1 tablespoon lemon juice
- ¼ teaspoon flaky sea salt
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon red pepper flakes - optional
Vegan white bean
- 1 slice sourdough bread - or bread of choice
- ½ avocado - pit and skin removed
- ½ cup cannellini beans - drained and rinsed
- 1 cup baby arugula
- 1 tablespoon lemon juice

Instructions
- Toast bread to desired level.
- Scoop avocado flesh into a bowl. Mash with the lemon juice.
- Spread the avocado on the toast. Sprinkle with flaky sea salt, pepper, and red pepper flakes.
- For other variations, follow these instructions:Vegan white bean: Mash the white beans and avocado together. Spread on toast. Toss the arugula with the lemon juice and put on top of the avocado bean spread. Sprinkle with the hemp hearts.Mexican-inspired: Prepare the pickled red onions ahead of time. Mash the avocado and lime or lemon juice together. Spread on toast. Top with pickled red onions, corn, and feta or cotija.Egg: Prepare the egg your desired way. Mash the avocado and spread on toast. Top with the egg and other toppings of choice, such as cheese, hot sauce, or chopped bacon.Caprese: Mash the avocado and spread on toast. Top with the tomatoes and mozzarella.
