    Baked Garlic Beet Chips

    What better way to celebrate the Christmas season than with a yummy root vegetable? Spoken like a true food nerd, I know…but, believe me, this recipe is a MUST try! Throw these garlic beet chips into the mix with your Christmas roasts and eggnog, and you won’t be disappointed. Or better yet, leave them out for Santa on Christmas Eve. I hear he’s watching his weight ;).

    As another semester of grad school comes to an end, I finally have the chance to experiment in the kitchen. And in typical Veg World fashion, I was aiming to create a recipe that was fast, inexpensive, and just plain delicious. Too difficult a feat?! Well, I’ll let you decide for yourself.

    Baked Garlic Beet Chips
    Nothing “beets” this color!

    Beet chips are kind of like the holy grail of veggie chips. Baking thinly sliced beets really transforms their flavor and enhances their earthy yet slightly sweet taste. The final product can be enjoyed by themselves as a snack or paired with a white bean dip or hummus.

    You can even prepare large batches of these chips and give them as holidays gifts to the foodies in your life! Just wrap them up in a clear plastic bag with a green bow, and you have a festive red and green Christmas present.

    Garlic Beet Chips

    Vegan and gluten-free garlic beet chips that are a delicious and healthy snack! With their bright red color, these chips are a great addition to holiday appetizer spreads.

    Ingredients 

    • 3 large beets - scrubbed
    • 2 tablespoon extra virgin olive oil
    • Garlic powder
    • Sea salt
    • Black pepper

    Instructions

    • Preheat oven to 325 degrees Fahrenheit. 
    • Using a mandoline (or knife- but be careful!), thinly slice the beets into even, circular pieces.
    • Place beet slices in a large bowl, and drizzle with olive oil. Mix to coat.
    • Place beets on 3 baking sheets without overlapping. Sprinkle with garlic powder, sea salt, and black pepper. Bake for 25 to 30 minutes or until crispy (but not burnt- happened to me the first time)! Keep a careful eye on them!

      Hi Lizzie! I keep extending your blog and these beet chips are just another reason why. Grandpa Jim always loved beets…me not so much, figuring they weren’t worth the calories but you’ve given me several reasons to rethink my “beet diet”, i.el some key minerals. So eager to ry the beet slaw. I’ll ave happy memories of Thanksgiving with you last year. Lucky lucky Will!

The beet slaw is one of my all time favorites, and was one of the first recipes I created on my own several years ago.
