Hi Paula, thank you for your question, and I’m so glad you have been enjoying my recipes! I have not used Einkorn flour in any recipes, but I am interested in trying it. I have some recipes that use almond flour, if that’s of interest to you. The date cookies and ginger cookies on this list both use almond flour. I also have several muffin recipes that use oat flour/ground oats instead of wheat flour. They include Zucchini Carrot Oat Muffins, Spinach Banana Muffins, and Oatmeal Sweet Potato Blueberry Muffins. You may also enjoy the Almond Flour Chocolate Cupcakes (made with sweet potato) and Fudgy Beet Brownies (made with almond flour).
