    Roasted Garlic Green Beans with Parmesan

    Roasted garlic green beans are a simple side dish that you can pair with almost any meal! This recipe has just a handful of ingredients but still comes packed with flavor from crispy garlic and parmesan cheese. Plus, it’s quick, without the need for any blanching before roasting the green beans in the oven.

    Lizzie’s Notes

    It’s the oldest trick in the book: adding cheese to something to make it taste good! And why not? An easy hack like that should be embraced, especially when you’re short on time but want to put some vegetables on the table.

    These roasted garlic green beans have all of my favorite characteristics. They’re fast and flavorful, complete with a generous sprinkle of parmesan and garlic that crisps up perfectly in the oven. My kids love these, and I like that they’re more interesting than the steamed green beans I rely on more often than I want.

    Ingredients and Substitutions

    • Green beans: Use fresh green beans for best results. However, you can use frozen if that’s all you have! Roast them straight from frozen without thawing first. Increase the baking time as needed to get your desired texture.
    • Extra virgin olive oil: Or sub avocado oil.
    • Garlic: Fresh garlic is key for making roasted garlic green beans. It will get crispy in the oven, but since green beans don’t need a long roasting time, it typically doesn’t get burnt. If you don’t have any fresh garlic or aren’t a fan of roasted garlic, sub a teaspoon of garlic powder instead.
    • Parmesan: I like to buy a block of parmigiano regianno and grate it myself, but you can definitely use pre-shredded parm. If you need the recipe to be strictly vegetarian, look for a parmesan cheese that’s labeled as such. You can sub another cheese, such as cheddar or mozzarella, but keep in mind the flavor profile will be different.
    • Lemon (optional): A squeeze of fresh lemon juice is a great addition before serving!

    Instructions

    Wash, dry, and trim the green beans. Toss them in olive oil and minced garlic, spread out in an even layer on a lined baking sheet, and sprinkle with parmesan.

    Roast for 15 to 25 minutes until tender and the parmesan is crispy.

    Storage and Reheating

    Leftovers will last in an airtight container in the refrigerator for 2 to 3 days. I like to reheat them on a lined baking sheet at 350 degrees F/177 degrees C for about 10 minutes until warmed through. You can add a fresh sprinkle of parmesan before reheating if desired. Alternatively, you can reheat them in a skillet with a little oil for a few minutes until warmed through.

    These green beans are a wonderful side dish! Serve them with my BBQ Lentils with Shredded Carrots, White Beans and Escarole, Veggie Chicken Burgers, or Spinach Feta Salmon Burgers. They’re also perfect for the holidays.

    Ingredients 

    • 1 to 1.5 pounds green beans
    • 2 tablespoons extra virgin olive oil
    • 6 large cloves garlic - minced
    • ¼ teaspoon salt - more to taste
    • ½ cup freshly grated parmesan cheese - more to taste
    • Lemon juice - for serving, optional

    Instructions

    • Preheat the oven to 400℉/204℃. Line a baking sheet with parchment paper.
    • Prepare the green beans by washing, drying, and trimming if needed. Transfer them to the lined baking sheet. Toss with olive oil, minced garlic, and salt. Spread them out in an even layer. Sprinkle with the parmesan cheese. (In case you're wondering, you do not need to blanch green beans before roasting in this recipe.)
    • Roast for 15 to 25 minutes until tender and browned to your liking. I typically roast them for about 20 to 23 minutes. I like the parmesan and garlic to be crispy.
    • Enjoy warm with a squeeze of lemon juice or extra sprinkle of parmesan if desired!

    Notes
